JOB DESCRIPTION

Dedalus has an immediate need for counter servers at our new Stowe shop and wine bar. With a unique counter service model that combines wine service and food preparation, our wine bar is the ideal environment for passionate hospitality professionals. The position’s primary role is to efficiently execute wine, coffee and food service. Full-time hours with benefits.

This position involves plating and heating food, pairing, pouring, and discussing wine, and, ultimately curating unique culinary experiences for our guests. The ideal candidate will be personable, cool-headed, sales-driven and able to speak intelligently and informatively with guests. A demonstrated passion for and desire to learn more about the exceptional wines and products we sell is a must. Whether you’re drizzling olive oil over a wild mushroom toast or draping anchovies over Burrata di Bufala, introducing a guest to the magic of pairing vin jaune and comté or white Burgundy and roast chicken, or explaining orange wine to a curious customer, your excitement for these products should be contagious. You’re an ambassador. This position redefines the role of the sommelier. This position also requires effective communication skills to facilitate service with the expeditor and front of house staff.

JOB RESPONSIBILITIES

-Discuss, open, and pour wine properly

-Curate engaging and transportive experiences for our guests

-Possess a very detailed knowledge of the wines, products, and dishes being served. You must become an expert on our menu and program offerings.

-Prepare food items as specified by recipes and instructed by sous and executive chef

-Prepare coffee items as specified by coffee roasters and managers

-Execute a la minute preparation of menu items, hot and cold

-Demonstrate a high level of cleanliness, efficiency, and organization

-Maintain poise and professionalism during busy periods of service

-Record a nightly inventory of prep items for the prep team and restock station after service nightly

-Maintain adherence to SOPs, and keep up with daily cleaning tasks

-Clean kitchen and work area thoroughly

QUALIFICATIONS

-At least 1 year of experience in either BOH or FOH positions. Someone who has worked in both areas is preferred.

-Demonstrate professional service skills

-Must be able to lift at least 50 lbs.

-Must have nights and weekends available

-Possess a willingness to learn and to work within prescribed SOPs

-Have a cool head

-Have at least intermediate wine knowledge, or be a beginner eager to increase knowledge

-Demonstrate an ability to work well with others

-Be self-motivated

-Have strong organizational skills

-Have strong attention to detail

-Possess strong communication skills

-ServSafe Certification preferred, but not required

-WSET, CMS, or equivalent beverage certifications preferred, but not required
