POSITION SUMMARY:

Sugarbush Resort is seeking an Executive Chef to join our food & beverage team at Rumble's Bistro & Bar. This position is responsible for successful culinary production operations - duties include food production of restaurant meals, guest/employee retail operations, and catering functions.

RESPONSIBILITIES:

  • Responsible for all food production and presentation.
  • Plans & coordinates menus.
  • Assures food quality & food cost control, labor planning, employee selection, and employee training in cooking methods, presentation techniques, portion control, safety, and sanitation.
  • Maintains a safe and sanitary work environment for all employees.
  • Supervises and coordinates activities of cooks and other kitchen personnel engaged in preparing and cooking foods.
  • Prepares hot food items and specialty dishes in addition to managing and training cooks and kitchen personnel.
  • Responsibilities include menu development and planning, preparation of budgets, and maintain food costs and other records.
  • Other duties include food preparation, presentation technique, and the establishment of quality standards.
  • This position must requisition and purchase all food products as well as complete food production records and cost menus all on a regular basis.
  • Standardizes production recipes to ensure consistent quality of accepted samples, plans production schedules monthly, ensures maintenance of equipment, and supervises the production line to ensure portion and control, including maximum utilization of employees and equipment.
  • This position is essential in maintaining high standards of quality service and safety to ensure legal compliance as well as customer satisfaction.

QUALIFICATIONS:

  • A.O.S. Degree in Culinary Arts, at a minimum
  • Certification and five (5) years experience in managing culinary teams.
  • Knowledge of food and catering trends with a focus on quality, production, sanitation, food cost controls, and presentation.
  • Batch cooking or high volume cooking experience preferred.
  • Experience with food production for large catering and/or banquet functions
  • Knowledge and experience in managing the culinary department as well as administrative management responsibilities.
  • Must be comfortable working over hot equipment for stretches of several hours, erratic break schedules, working in confined areas, lifting 30-50 lbs, and standing for long periods of time.
  • Must be comfortable spending occasional time outdoors or in temporary venues.
