Position is located at the Siren Song Vineyard Estate and Winery in Chelan, WA.

RESPONSIBILITIES & DUTIES - GENERAL

Manage all aspects of kitchen operation from opening to closing

Oversee that checklist items are completed in a quality way for every shift

Create and follow operating procedures and checklists for opening and closing

Check, secure, label, and date food and ingredients to ensure freshness and minimize waste

Supervise and coordinate line cooks, FSAs and other food preparation workers

Work with Executive and Sous Chef to develop and refine recipes and determine how to present the food

Work with Executive Chef to plan and execute menus, food costs, ordering, and costing for special event menus

Ensure all recipes and plating techniques are documented, trained, prepared, plated and portioned consistently

Track and manage food costs, waste costs, and labor costs

Use Siren Song tools and documentation to monitor and manage prep quantities and inventory

Execute weekly inventory, purchasing, product check in, and monitor food costs

Know how to trouble shoot, use and fix all kitchen equipment used by culinary services team

Inspect supplies, equipment, and work areas for cleanliness and functionality

Participate in the hiring, training, and supervision of cooks and other food preparation workers

Order and maintain inventory of food and supplies needed to ensure efficient operations

Monitor sanitation practices and ensure that kitchen safety standards are followed

Identify prep requirements and perform all food preparation for all menu items

Perform consistent plating and portioning for all recipes

Ensure cleanliness and follow food safety requirements

Manage inventory and supplies requirements

Support all aspects of food events including weddings, winemaker’s dinners, rehearsal dinners, meetings, etc.

Maintain the highest level of hygiene, health standards, and uniform code

Provide line management, prep planning, scheduling etc.

Expedite food to customers, bus, and wash dishes as needed

Attend staff meetings
