The Prepared Foods program at Dedalus is an important extension of the experience we strive to offer. It aims to fill our guests’ tables and make gathering with friends and family easy and enjoyable. The Prep Foods counter strives to offer wine-friendly food at its freshest, with a focus on beautiful presentation. From light grazing to full-blown feasts, Dedalus aims to provide for our guests at every step.

THE IDEAL CANDIDATE
The Dedalus kitchen seeks to employ dedicated, creative individuals who have a passion for creating wine friendly, seasonal food. A great Dedalus candidate should be equally eager to explore the history and whys of regional foods as they are to prepare them. The prepared foods program exists to create curated food & wine experiences for people to take home and that requires energy, enthusiasm, and a healthy respect for classic cooking techniques.
JOB RESPONSIBILITIES
Prepare food items as specified by recipes and instructed by sous and executive chef
Prepare and package pickles, preserves, charcuterie items, and prepared foods for the market cases
Assist in whole animal fabrication and charcuterie production
Maintain fires in wood-burning ovens for roasted proteins and seasonal vegetables
Maintain a high level of cleanliness and organization
Maintain poise and professionalism during busy periods of service
Assist in washing dishes
Record a nightly inventory of prep items for the prep team and restock station after service
Possess or gain a basic knowledge of the products and dishes being served
Maintain accurate product ordering/prep lists
MINIMUM QUALIFICATIONS
1 year of experience in a professional kitchen environment
Professional knife skills
Must be able to lift at least 50 lbs
Must have nights and weekends available
Willingness to learn and to work within prescribed SOPs
Have a cool head
Work well with others
Organizational Skills
Attention to detail
Strong Communication skills
An interest in wine and service
A valid Vermont food handler’s card (ServSafe certification preferred)
