Amazing opportunity for barbecue enthusiast or budding barbecue chef! Learn directly from Chef Elliott Moss about whole hog traditional North Carolina barbecue. Genuine farm to table whole hog barbecue is a physically demanding process and a willingness to do that work is part of what sets our team and our food apart from all the other barbecue outfits in the area. Must be able to lift up to 100lbs, be in a hot/smokey environment for long periods of time. Overnight availability is required.

Position Summary: Cook focusing on wood fire pit smoking hog to chef's specified procedures. Adhering to all recipes with capacity to self motivate and stay on task. Previous Experience Preferred.

Primary Responsibilities:

Cook focusing on wood fire pit smoking hog to chef's specified procedures

Adhere to recipes in a way that meets chef's standards

Maintain cleanliness and organization of everything in the kitchen

Follow company policies and procedures as described in employee handbook, including dress code, punctuality, and professional attitude

Provide consistent, high food quality in alignment with Buxton's standards and reputation

Make clear and precise inventory counts

Cleanliness and sanitation standards meet health code requirements

Checklists MUST be completed every shift

Communicate needs and issues

Preserve and embrace company culture

Must be able to lift up to 100lbs.

Be able to thrive in a consistently hot/smokey environment

Willingness to drive to the farm to create authentic "farm to table" food

Organization, Cleanliness & Systems:

Check sanitizer buckets, gloves, rags and be health inspection ready

Ensure dishes, pots, pans, utensils are stored in proper place

Maintain cleanliness of prep room, line, walk-in, coolers, and pantry

Keep coolers, walk-in, and pantry clean, stocked, and organized at all times

Handle trash, recycling, and cardboard boxes at end of shift

Communication:

Check in with Kitchen Manager at end of each shift

Attend monthly All-Staff meetings

Six month check-ins with Chef and Kitchen management

Evaluation Metrics:

Positive reviews and comments from Chef, other cooks, FOH, and guests regarding food quality and consistency

Positive feedback from co-workers regarding organization, cleanliness, culture and systems

Health Code score in the kitchen
