The Innsbruck Inn at Stowe, a 25 unit resort inn operated by the Drolet Family since 1975, is looking for a Full Time Breakfast Chef. At the Innsbruck Inn, breakfast is a very important part of the B&B service that we offer. The ideal candidate will enjoy providing a delicious and attractive hot & cold breakfast buffet on most days, as well as made to order breakfast on less busy, off season dates for our guests at the inn. Creativity, within reasonable food cost factors, is highly encouraged. Most importantly, the Breakfast Chef sets the tone for a welcoming, friendly atmosphere for our guests, in addition to providing sincere professional service through actions that display self-confidence, grace and courtesy to our guests and colleagues. The Breakfast Chef is also responsible for preparing our self serve Afternoon Tea & Snack, including baking cookies, brownies or simple, but well presented and delicious alternative. A self serve soup is also prepared for the winter season.

Essential Duties:

Manage the day to day activities associated with daily operations.

Supervise and train Breakfast staff to follow food safety protocols established.

Train and direct support staff to provide outstanding customer service, and provide a clean, attractive eating experience.

Manage activities to maintain a clean and organized work environment both in the kitchen and dining area

Reads and employs math skills to follow recipes and prepares all food items according to standard recipes

Create breakfast buffet specials for regular season weekends and holidays.

Create afternoon tea baked treats.

Acknowledges any special requests and prepares the menu item accordingly, on certain occasions.

Follows the proper storage standards

Prepares food using the appropriate portion size, cut and cooking method

Prepares daily requisition for supplies and food items for production

Makes weekly ordering from our food purveyors.

Maintain & manage food & supplies inventory levels and control waste in order to promote fresh product, low waste and good profitability.

Maintains sanitation and cleanliness standards in the kitchen area that meet or exceed the state and local Health Board inspection and Spruce Peak requirements

Supervise and contribute to cleaning entire kitchen at the end of service.

Supervise and contribute to collect, sort and clean dirty dishes, glassware, tableware and other cooking utensils.

Proactively offer assistance and report service needs, special guest needs, or concerns immediately to General Manager/Owner.

Communicates effectively with General Manager/Owner, Front Desk managers and all other inn staff.

Is able to lift, push, and pull a minimum of 75 lbs

Is able to stand/walk up to 6-8 hours per day

Qualifications

High school diploma or equivalent preferred

Cooking experience preferred in a fine dining restaurant

Ability to handle food, objects, products and utensils

Ability to bend, stoop and kneel

Pleasant and attentive personality

Attention to detail

Ability to multitask

Ability to adapt to changing guest needs

Ability to operate dishwasher machines
