We are currently seeking a full-time Kitchen Manager to join our PV Eats team! PV Eats is a locally-owned marketplace, restaurant and wine bar that’s as unique as Kaua‘i’s North Shore itself.

Job Summary:

The Kitchen Manager is responsible for serving world class food while managing cost and efficient kitchen operations. oversees all culinary staff, maintains product standards and consistency, enforces operating procedures, implement safe food handling practices, maintains a clean and organized kitchen, while managing a profitable food operation. Candidate would need to be knowledgeable about cooking techniques & procedures, systems operations, staffing strategies, as well as safety and sanitation guidelines. Candidate will work directly with the Restaurant Manager in all aspects of the operation and work directly with the SFOC Chef de Cuisine to execute outstanding Mediterranean inspired dishes with local influenced menus. As a Kitchen Manager your focus will be on a yearly scope of the establishment.

Duties and Responsibilities:

Ensure that all items are to spec, dated appropriately, packed, sealed, and labeled correctly.

Develop, implement, and maintain sanitation practices and protocol.

Conduct hands-on teaching and training in kitchen, working closely with cooks, as well as other staff as applicable and assist with food preparation, operation, and execution.

Train and educate FOH/BOH staff on new menu items and changes in procedures for current menu items; monitor and hold staff accountable for implementing the changes.

Develop production methodologies to increase efficiency, productivity, quality and/or consistency in kitchen. Ensure all equipment and tools are used appropriately.

Maintain Master Prep Sheet and individual Prep Sheets daily. Provide quality control on all products and document accordingly.

Responsible for proper ordering and inventory control. Ensure appropriate use of supplies.

Develop, train, and mentor direct reports.

Hire, coach, counsel, and conduct performance evaluations of direct reports.

Delegate responsibilities and assignments to employees, appropriate to their skills and ability.

Oversee daily production and offer guidance while keeping employees on track and efficient.

Motivate employees to achieve peak productivity and performance; bring out their strong points and help work through their weaknesses.

Create an enthusiastic, positive work climate, and energize others.

Work with restaurant manager and/ or store director to instill company culture, build morale and create an ongoing positive work environment, using established as well as newly developed initiatives.

Other duties as assigned.

Education, Training, Skills and Experience Requirements

AOS Culinary School graduate or related training.

Passionate culinarian with great palette and sense of presentation.

Ability to handle multiple tasks, adapt to change and work well in environment with time constraints.

Ability to troubleshoot effectively.

Ability to work flexible schedule including weekend and holidays to accommodate business levels.

Ability to meet budgets including labor, food, and applicable direct operating costs.

Ability to set and meet deadlines on time, by working with a sense of urgency.

Detail-oriented with good organizational skills, performing work accurately and efficiently while meeting deadlines.

Demonstrated excellent communication skills, both oral and written.

Demonstrated effective leadership skills including delegation skills.

Possesses administrative skills: knowledge of spreadsheet, database, general office equipment: copier, fax, scanner.

Able to work independently and on a team.

Knowledge of word processing programs: Microsoft Word, Microsoft Excel, Microsoft Outlook

Knowledge of food costing models, menu mix and engineering models.

Knowledge of food service sanitation.

Willingness to be open, to learn and take on new responsibilities.
