Job Summary:

Factory by Beer Tree Brew is a restaurant/brewery projected to open late 2020. We are looking for an Executive Chef who matches the drive and excellence that is Beer Tree. The facility features a state-of-the-art brewery and taproom on the lower level and a brand-new restaurant and kitchen on the second level complete with a beautiful wood-fired, wood-heat pizza oven. The Executive Chef will design the menu, hire, develop, train and manage kitchen personnel and supervise/coordinate all related culinary activities; estimate food consumption and requisition or purchase food; select and develop recipes; standardize production recipes to ensure consistent quality; establish presentation technique and quality standards; plan and price menus; ensure proper equipment operation/maintenance; and ensure proper safety and sanitation in the kitchen. The Executive Chef may cook select items or for select occasions. The Executive Chef may oversee special catering events and may also offer culinary instruction and/or demonstrate culinary techniques. The Executive Chef directly supervises kitchen personnel with responsibility for hiring, discipline, performance reviews, and initiating pay increases. We are looking for a candidate who takes pride and ownership of the kitchen and quality of food produced. Freedom to express culinary creativity is highly supported by Beer Tree.

Duties and Responsibilities:

- Planning menus

- Making sure food is of the right quality and price and is produced on time

- Managing food stock

- Ordering food from suppliers

- Controlling budget and keeping accurate records

- Managing health and hygiene procedures

- Organizing the staff duty rotations

- Working with GM to coordinate events & catering

Competencies:

Required Education and Experience:

- Bachelor’s degree or related culinary degree

- Five or more years of industry and culinary management experience

- Previous experience with control food and labor cost, demonstration cooking, menu development, and pricing and development of culinary team preferred

- In depth experience with wood-fired pizza
