The HEAD LINE COOK / BAKER is responsible for preparation and production of all doughs &
other high quality menu items as well as leading the line in a fast paced environment. Experience with pizza dough is a plus. Experience with dumpling making & pleating is also a plus. Located in Reading Terminal Market. We have been featured in Philadelphia Magazine, Eater, Thrillist and Philadelphia Inquirer.
● Use and understand all recipes and maintain consistency and quality across the menu.
● Prepare doughs accurately, which includes mixing, kneading, dividing, shaping, proofing and
baking.
● Follow production schedule and maintain efficient timelines - especially in regards to
proofing.
● Ability and interest in working with a variety of doughs including pizza dough and knowldage of various bread-making and pizza making tecnhinques is a plus.
● Knowladge of dumpling making is also a plus, including dumpling rolling, pleating and prep of various dumpling stuffings.
● General preparation of items by cutting, chopping, mixing, and preparing sauces.
● General cooking of food items by using methods specified in recipes and kitchen standards.
● Running the line and delegating tasks to line & prep cooks.
● Cleans and sanitizes cooking surfaces at the end of the shift.
● Maintain cleanliness and comply with food sanitation requirements by properly handling food
and ensuring correct storage.
Qualifications:
Interested in menu and recipe development, releasing new specials and experimenting with fresh
ideas. Enjoys a professional vibe and has a passion for food and hospitality.
● Experience with various cooking methods, procedures and basic knife skills.
● Awareness of basic kitchen practices, e.g. FIFO and labeling, etc.
● General knowledge of bread and dough production is a plus.
● General knowledge of dumpling making is a plus.
● Experience in a fast-paced environment is a plus.
● Punctuality, organizational skills and attention to detail.
● Ability to plan and organize production. Accuracy and speed in executing tasks.
● Ability to operate large mixers and other tools/equipment in a professional kitchen.
● Min 3-5 Years of experience.
● High school diploma or GED.
● US work authorization required.
● Serve safe certification a plus
● Certificate or degree in culinary arts preferred.
● Work and stand/bend and lift 8-9 hours.
● Lift up to 50 pounds.
