$2,731- $3,938/mo. ($15.75 - $22.75 /hr) Appointments are typically made at the beginning of the pay range. This is a full-time position in HSU Dining Services with excellent benefits including medical, dental, and vision coverage; CalPERS retirement, life insurance, voluntary pre-tax health and dependent care reimbursement accounts and vacation, holidays, and paid sick leave.

About: HSU Dining Services is a division of Humboldt State University Center, which is an auxiliary organization and integral member of the campus community. The unit operates and provides all aspects of culinary services including full-service, seven days per week dining facility for resident students, a variety of cafés, marketplaces, catering, and food court options. Position Summary: Under general supervision, the Cook assists in preparing, cooking and dispensing food, cleaning work areas and equipment, and receiving and storing supplies. Prepare all hot/cold foods and in doing so, make decisions regarding the quality of product, portioning of ingredients, seasoning, and attractiveness of the final product (working from standardized recipes and daily production sheets provided by management). In addition to the preparation of specific menu items, cleans equipment and working stations and stores leftover food.

Duties: The Cook is responsible for, but not limited to, the following:

Prepares food according to posted production sheets and recipes provided. Uses production sheets as guidelines.

Adjusts recipes to volume demand.

Keeps overproduction and waste to a minimum.

Fills out daily production sheets recording all food items used.

Replenish food items as needed.

Checks expiration dates on dairy and processed items to ensure freshness and quality.

Garnishes and enhances eye appeal for food display.

Maintains portion control in areas where possible.

Makes maximum use of leftovers within limits of quality control.

Prepares food items according to projected customer count or standard menus.

Taste tests food items when necessary.

Maintains all foods at proper temperatures.

Properly cleans and maintains working area.

Observes all sanitation and safety precautions

Assumes responsibility for proper use, care, and maintenance of equipment.

Stores leftover items using proper methods making sure they are wrapped and labeled.

Uses all necessary equipment that will help cut down on production time.

Informs management about problems with equipment.

Minimum Qualifications: Must have at least two years of food service experience and one year of supervisory experience.

Knowledge, Skills and Abilities: In addition to the duties listed above, good working knowledge of kitchens, cooking skills, knife skills and prep techniques; knowledge of safe food-handling and sanitation practices. Strong customer service orientation; able to apply, interpret and adhere to department policies and procedures; ease in dealing with a diverse population including faculty, staff, students, and the general public; ability to work effectively in a climate characterized by heavy traffic loads, shifting priorities, and the need to balance multiple tasks. Must speak, read, write, and understand English; communicates effectively; possess excellent follow-through skills and attention to detail; position requires a high energy level and ability to sustain a high volume and fast paced environment for extended periods of time; passion for excellences; maintain cooperative working relationships in a team-oriented environment; operationalize sustainability concepts (economy, society, environment) into all aspects of performing job duties.

Physical Requirements: Average physical agility and ability to stand for prolonged periods of time; strength and mobility to lift and carry items up to 50 pounds; reach, bend, kneel, stoop, climb, push, and pull items. Must have manual dexterity and eye-hand coordination; corrected hearing and vision to normal range, and clear verbal communication. Ability to work extended shifts.

Special Conditions of Employment: Ability to work a flexible schedule including evenings and weekends. Must possess ServSafe certificate or equivalent. Occasional layoff due to lack of work; these periods generally fall on semester breaks and summer session. Valid California Driver's License and a driving record acceptable to our insurance underwriters. Willingness to comply with neat grooming standards and present a professional appearance.
