Providence is calling a Food and Nutrition Cook II Room Service (Food and Nutrition, Variable, 0.0 FTE) to Providence Alaska Medical Center in Anchorage, Alaska. In this position you will:

Ensure work area is properly sanitized before daily production begins. Constantly clean, sanitize food areas and equipment including production, service and all appropriate storage areas. Perform proper handwashing before working and at all appropriate times daily.

Secure needed food supplies and small equipment and ensures they are properly stored in work area. Daily and consistently organize, stock, label and date all stored items.

Review production sheets and follows standardized recipes for production. Cook all foods to necessary final temperatures. Cook and bake food in quantities and batches to assure food prepared is of the highest quality and nutritive value.

Follow Hazard Analysis Critical Control Point (HACCP) guidelines for safe food handling to include thawing, prepping, cooking, holding, cooling and reheating foods. Properly document food temperatures during thawing, cooking and holding of foods in the temperature tracks sheets.

Prepare individual plates/orders according to customer preferences and within the required time. Sometimes as a room service cook you will be asked to tailor individual items according to special customer and/or patient requests.

Hold all hot foods at 140 degrees F or above. Hold all cold foods below 40 at all times.

Reheat all foods that do not meet standards for acceptable serving temperature, to at least 165 degrees for 15 seconds. Document any corrective action to prepared food items.

Qualifications:

Required qualifications for this position include:

2 years experience in quantity food preparation

Obtain Municipality Food Handlers Certificate within 30 days of hire

Preferred qualifications for this position include:

High school diploma or GED

Specific vocational training
