l'etoile restaurant in Edgartown on Martha's Vineyard Island is seeking an experienced line cook for the 2024 season. Minimum Three years hot line experience necessary. This position works 5 shifts on a very busy hot line with another line chef and the Chef-owner. This position is May through October /November, five days at 50 hours a week w/two days off even in high season. Pay is BOE, starting at $26 an hour w/overtime. Applicants must include an up to date resume /CV, a cover letter stating availability, in-service cooking experience and a bit about you. Cold station, baking experience is a plus. Culinary degree is not required. We require a recent reference /contact for a reference. We need a great cook, not an artist.Responsibilities: prep your menu items, stock & maintain your station for service have a sense of urgency and be set up for service make gnocchi, polenta, cook off pasta, blanche vegetables, make starches, reheat items as needed plan & make daily evening staff meal w/ Sous for BOH & FOH prior to dinner service. Assist in weekly food & dry goods inventory. in service cooking with a sense of urgency responsible in-service for all vegetables, starches, short ribs on polenta and occasionally a fried item maintaining calm & coolness in a busy hectic service plating with the Sous if time allows Restocking your station in service and for the next day Assist in writing the daily work list for kitchen staff and a needs list for the next day.l'étoile is a special place to work and Martha’s Vineyard is a wonderful place to enjoy your days off.
