The Galley at Ralph's Fishing Station and Marina is a seasonal kitchen on the water in Mt. Sinai Harbor. Ralph's Fishing Station is a family owned and operated business since 1961. We are looking for a Lead Cook to join our team this season!

Job Overview

Our Lead Cooks are responsible for cost effective preparation of quality food in safe and efficient compliance with proper food preparation and handling, policies and procedures, and federal, state, and local regulations. Promptly reports emergencies, accidents, injuries, missing articles, damage, safety hazards to management.

Responsibilities:

Food Preparation: Prepare ingredients for menu items and daily service. Ensure consistency in taste, texture, and presentation.

Cooking: Cook and grill menu items, including meats, seafood, vegetables, and sauces, with attention to detail.

Station Setup: Set up and organize the cooking station with necessary tools, equipment, and ingredients before service.

Team Cohesiveness: Coordinate with other kitchen staff to ensure that all components of a dish are ready at the same time, maintaining efficiency during busy periods. Work closely with the kitchen team, communicating effectively and maintaining a positive working environment.

Quality Control: Inspect ingredients and finished dishes for quality, taste, and appearance. Address any issues to maintain food standards.

Food Safety Compliance: Follow all food safety and sanitation practices to prevent cross-contamination, spoilage, and health hazards.

Menu Knowledge: Understand the menu offerings, including ingredients and preparation methods. Assist with menu changes and updates.

Cleaning and Maintenance: Keep the cooking station clean and organized, ensuring that equipment and utensils are properly maintained.

Inventory Management: Monitor ingredient levels and notify the kitchen manager or chef of any shortages or stock requirements.

Adaptability: Be flexible and willing to take on different tasks or responsibilities as needed in a fast-paced kitchen environment.

Skills and Requirements:

Previous experience working in the food service industry as a cook or chef.

Strong knowledge of food preparation techniques and culinary principles.

Ability to work well under pressure and meet timing requirements.

Knowledge of food safety regulations and proper handling procedures

Ability to work in a team-oriented environment.

Willingness to work flexible hours, including evenings, weekends, and holidays.

Excellent communication and leadership skills to effectively manage a team.

Working Conditions & Physical Effort:

Physical requirements include extended standing and walking, climbing, bending, reaching, pulling, pushing, kneeling, and lifting to 50.
