Sushi Chef- The Dolphin

We are currently seeking an experienced and passionate Sushi Chef to assist our lead Chefs at the sushi bar at The Dolphin. As a Sushi Chef, you will be responsible for preparing and presenting a variety of sushi and sashimi dishes with precision and creativity. If you have a strong background in sushi preparation (or are eager to learn), impeccable knife skills, and a passion for delivering exceptional dining experiences, we want to hear from you!

Responsibilities:

Prepare and present a variety of sushi and sashimi dishes according to established recipes and standards.

Ensure that all sushi products are handled, stored, and prepared safely and in compliance with food safety regulations.

Maintain cleanliness and organization in the sushi bar area, including equipment, workstations, and storage areas.

Train and mentor sushi bar staff in sushi preparation techniques, knife skills, and presentation.

Collaborate with kitchen team members to coordinate food preparation and ensure timely service during busy periods.

Monitor inventory levels of sushi ingredients and supplies, and assist in ordering as needed to prevent shortages.

Uphold The Dolphin's commitment to excellence in food quality, presentation, and guest satisfaction.

Qualifications:

Previous experience as a Sushi Chef in a high-volume restaurant or sushi bar, preferred.

Extensive knowledge of sushi preparation techniques, including rice preparation, fish cutting, and sushi rolling, preferred.

Impeccable knife skills and attention to detail in sushi presentation and garnishing.

Ability to work effectively in a fast-paced kitchen environment and handle multiple tasks simultaneously.

Strong leadership and communication skills with the ability to train and motivate other sushi bar staff.

Flexibility to work evenings, weekends, and holidays as needed.
