Why don't the fans in a freezer start immediately after defrost?

What component causes their delay?

Can you draw me a wiring diagram for a walk in freezer with the defrost timer and all the other components. If you can

draw that for me and explain it all, you're hired.

Oh, by the way, can you do a rack system like we find in HEB or Walmart?
