Are you the person we’re searching for to oversee all aspects of Fort George’s kitchen operations, menu execution, and staff? Do you have stellar communication skills, a passion for culinary excellence, and experience in hiring, training, supervising, and leading a team of passionate cooks? The Executive Chef is responsible for managing the daily functions of Fort George’s two kitchens, seasonal food truck and special festival and events menus, creating an environment that encourages ownership and accountability, collaboration and innovation. As the head chef at Fort George, you’ll continue the Fort’s tradition of excellence and creativity while directing the operation of our high volume pubs. You must have extensive experience hiring, training, scheduling, supervising, and coaching an effective body of kitchen staff, as well as a dedication to high standards of consistency, production, cleanliness, and culinary integrity. This is an exempt, salaried position with a full-time and variable schedule that will include nights, weekends, holidays, and any other times of peak pub sales volumes.

ESSENTIAL FUNCTIONS:

Building strong team cohesion by listening, learning, and coaching; fostering a culture of continuous improvement

Providing guidance and encouragement to all personnel in a positive and constructive manner

Overseeing or assisting with the hiring, training, supervising, and development of BOH staff; managing schedules and workflows

Overseeing or assisting the Pubs GM and/or HR or VP staff with BOH staff performance management, coaching, & corrective action, training events/safety training, etc.

Working with Managers to train and develop all BOH staff

Maintaining high level of communication with supervisors, direct reports, and key team members

WHO WE ARE LOOKING FOR:

Must be 21 years of age or older.

Experience leading complex people teams in a full-service, high-volume restaurant setting required.

Detailed knowledge of the core principles of food preparation, handling, safety, TCS protocols, and menu development, including but not limited to standardized recipes, batch cooking, line cooking, wood-fired oven cooking, and proper temperatures for storage, rotation, and service.

Being able to adapt to frequent changes in workload & schedule and adjust priorities quickly as circumstances dictate.

Ability to communicate with patrons, purveyors, and coworkers; read labels, chemical information, etc.

Ability to use various computer software programs and apps as required by the company and role.

Basic math competency and volume conversions.

Must have reliable vehicle and a drivers' license in good standing order.

Manager ServSafe certification required (may be obtained after hire).

Valid Oregon Food Handler’s card or equivalent required (must be obtained within 30 days from first date of employment).

Valid OLCC Server’s Permit required (may be obtained upon hire).

Cicerone Certified Beer Server certification (or willingness to obtain) a plus.

COMPENSATION & BENEFITS WE OFFER (varying eligibility criteria):

$68,000 - $78,000 per year DOE
