As a Kitchen Manager at Taqueria Xochi, your primary responsibility is to ensure the impeccable execution of all menu items in line with our high standards. You will oversee day-to-day Back-of-House (BOH) operations, diligently working to achieve our labor, COGS, and operational objectives. Collaboration with the FOH Manager is crucial in making your location a successful establishment.

Key Responsibilities:

Menu Execution:

- Execute menu items as per company standards

- Lead and oversee all food production processes to maintain quality and quantity targets.

- Ensure ingredient purchases align with menu execution requirements.

- Adhere to menu execution guidelines and recipes provided.

Training and Development:

- Manage the training and development of all BOH staff, including shift leads.

- Cultivate a pool of exceptional BOH talent through personal development and cross-training initiatives.

- Train senior BOH team members in ordering and COGS management best practices.

- Monitor and enhance the performance of each BOH team member.

- Prepare BOH team members to meet Department of Health (DOH) standards and ensure readiness for DOH inspections.

- Conduct training sessions for FOH staff, explaining menu items during pre-shifts

Service and Operations:

- Oversee day-to-day kitchen operations, establish and maintain systems and processes to enhance the knowledge, efficiency, and productivity of the BOH team.

- Collaborate on the daily Order Guide to optimize product quantities.

- Maintain a maintenance and repairs calendar.

- Build strong relationships with service providers in collaboration with the FOH Manager.

- Ensure proper maintenance of kitchen equipment.

- Ordering

Financial Management:

- Collaborate closely with the FOH Manager to establish and maintain systems and processes to meet labor and COGS targets, aligning with profit and loss (P&L) objectives.

- Work with the FOH Manager and shift leads to minimize waste.

- Create weekly BOH schedules to meet labor targets and coordinate with the Operations Manager if overtime is necessary.

- Manage daily forecasts of products to optimize inventory usage.

Qualifications:

- Willingness to work any shift and maintain a flexible schedule.

- Ability to work extended hours.

- Possession of a Food Handler certificate.

- Clean, organized, and dedicated to excellent hygiene.

- Physically fit and capable of safely lifting up to 50 pounds.

- Detail-oriented, proactive, and efficient at multitasking.

- Positive attitude and open to learning and taking direction.

- Knowledge of Mexican cuisine and financial acumen.
