The Smokehouse Crew Member is in charge of processing all heat treated and ready to eat products that come out of the smoker. This includes Bacon, Ham, Jerky, Snack Sticks, and a variety of specialty smoked items. They emphasize increased product yield by reducing waste and operating machinery efficiently to get clean cuts.
With experience, a member can identify any product and with which recipe it was cured in by a simple glance. Integrity for matching the right product with the right ticket is of utmost importance. Time management of production and smoking schedules combined with an understanding of our butchery process will provide a satisfying sense of completion each day.
Key Performance Outcomes:
-10% or less of ends generated by bacon production
-100% Labeling accuracy, less than 2 noticeable errors per quarter
-Complete weekly inventory of smokehouse production
-100% success rate tracking Temperature probes logging product down to 40 degrees
-Retail must always have every flavor of Bacon sliced and ready to sell.
Key Responsibilities:
Pull product out of smoker and into blast chiller when cycles end, track temperature with probes
Slice bacon and portion it according to the customer’s specification
Label all products and document where they are stored in freezer or in retail cooler
Maintain sanitary conditions throughout shift and break down room at end of day
Clean bacon slicer after use, ready for production on following day
Organize Vacuum bag cart and keep clean on regular basis
Remove all product and deep clean blast chiller on regular basis
Report any mechanical issues or paperwork documentation errors immediately
Qualifications:
2+ years in production, line work, or similar back of house environment
Strong written and verbal communication skills
Job Expectations: Work with progressive scale system. Operate all equipment and handle utensils safely. Maintain high sanitation standards. Work with a sense of urgency.
