About Ends Meat:
Ends Meat is a Whole Animal Salumeria and Butcher Shop. We focus exclusively on whole animal butchery; working with regional farms who have dedicated their work to sustainable or regenerative agriculture. We serve our customers by providing fresh butchery, farm-fresh produce, fermented products, and hot lunches. We also produce dry cured meats inspired by traditional Italian styles and methods and operate a USDA certified wholesale company, serving the Greater NY area 100% grass fed beef and pasture-raised pork.
Industry City
Located at 254 36th Street in Brooklyn, our Industry City location has been operating since 2015. This is our first location and it’s where the bulk of our production is done. Here, we have a full lunch counter selling sandwiches with our housemaid meats, a USDA certified facility producing raw cuts, salumi, and charcuterie, and a full butcher counter
Description of the Role:
The Line Cook at Ends Meat is a customer-facing role that is dedicated to making sure every customer who comes in the door at Ends Meat leaves happy. As a member of the kitchen team, this role pivots between tasks frequently. This role is responsible for being on time, attentive, and setting up and closing down the kitchen; including setting up the bar for the day, prepping all foods, maintaining a strict food safe environment, among other things. Must be able to work Saturdays and Sundays.

Job Responsibilities:
Maintain a food safe environment; including regular sanitation of surfaces, displays, and equipment.
Adhere to the “FIFO” rule, ensuring all ingredients are appropriately labeled and dated.
Knowledge base of our farm and animal ethical standards.
Assist in the prep of all ingredients, sauces, soups, sandwiches, and dishes.
Able to run the kitchen line autonomously and still ensure all orders take no longer than 10 minutes to execute.
Prep prepared foods, sauces, and ingredients going into RTE products.
Keep an organized work station.
Maintain sharp and clean knives and other personal tools of the trade.
Strong task management skills and able to prioritize numerous orders simultaneously.
Have a working knowledge of meat preparation techniques and ability to communicate them concisely.
Maintain strict inventory of products.
Strong communication, task management, customer service skills, and able to prioritize the needs of the kitchen on any given day.
Be open to new training and tasks as they appear.
Job Requirements:
Food Protection Certification from NYC DOH
Be able to lift and carry 50lbs.
Crouching, kneeling, writing, ability to hear and understand/distinguish speech, fine speaking skills, gross manipulation (seizing, holding, grasping, turning, or otherwise working with the hands), fine manipulation (touching, picking, pinching, or otherwise working primarily with fingers), visual acuity.
Respectfully express and exchange ideas with customers and coworkers.
Able to stand for extended periods, up to 10 hours, for 40 hours a week.
