FLSA Status: Non Exempt, Hourly

Job Type: Full-Time (30 or more hours per week)

Summary:

San Diego Country Club has been a distinctive part of San Diego’s golf history for more than a century. We are the oldest country club in San Diego and the only private course in southern San Diego County, an easy 15-minute drive from downtown, Coronado or East Lake. Our Food and Beverage operation consists of $1.4 million in annual sales in our banquet and a la carte business. Members have dining options in our Golf Grille, Billy Casper Room, Mickey Wright Lounge, and Main Dining Room. Dinner service is offered for special club and catered events. Saturdays are reserved for banquets. Lunch is offered 6 days a week, and breakfast is served on Saturday and Sunday.

Essential Job Functions:

· Line Cook II works alongside the chef or kitchen manager

· Leads line cook staff and provides guidance as needed

· Ensures all equipment and appliances are ready for use

· Aid in training new kitchen employees

· Prepares meats, seafood, vegetables and other items required for line and special function purposes

· Ability to cook proteins to temperature where appropriate

· Oversees consistency of food production to the Club’s culinary standards

· Verifies taste

· Creates plate design for restaurant and catering events

· Carefully follows standard recipes when pre-preparing and preparing all items

· Rotates all stock when putting away food orders, with labels facing out to insure proper rotation

· Labels and dates all food prep items to be used immediately and or for storage

· When using previously prepared food, check for spoilage or hazards regardless of date

· Reports any spoiled food when throwing away and adds to food waste log

· Uses food preparation equipment according to manufacturers’ instructions

· Leadership role on the line during meal period service

· Works with servers to ensure orders are completed according to request and on time

· Cleans work station and equipment

· Returns unused food products to proper storage areas

· Assists with preparation of other food products on serving line as needed

· Consistently uses safe and sanitary food handling procedures

· Returns all soiled cooking utensils to the dishwashing station

· Assists with banquet preparation and execution when needed

· Asks for assistance when heavy lifting is required – never lift trash cans alone – wait for assistance to be available when required

· At completion of tasks, report to supervisor for other instructions and or find other constructive tasks

· Other duties as required and or assigned

Qualifications:

· Proven experience as a Line Cook in a fast-paced kitchen environment

· Knowledge of various standard and accelerated cooking methods, ingredients, equipment, and procedures

· Proven Experience in line leadership and culinary artistry

· Excellent Knife Skills

· Food Handler’s Management Certification

· Ability to embrace the culture of the Club and ensure the highest standards of food production are executed daily

· Familiarity with industry best practices in food safety and sanitation

· Ability to work well under pressure in a team environment

· Culinary school diploma or equivalent certification is a plus

· Excellent oral communication skills

Supervisory Responsibilities:

· Some, Line Cooks

Work Conditions:

· Work hours may include days and evenings on weekdays and weekends.

· Machine/Equipment/Tools Used

· Kitchen appliances, knives, grills, stoves, ovens, pots and pans, utensils.

Physical Requirements:

· Read and write (English) and some Spanish Preferred

· Communicate verbally with staff members and/or customers

· Give and/or follow verbal and written instructions Supervise subordinates

· Visually inspect all work areas

· Operate equipment for several hours at a time

· Perform mathematical calculations involving fractions, decimals, and percentages

. Retrieve, read and interpret information from technical sources

· Lift up to 75lbs. occasionally, 40 lbs. frequently, and 20 lbs. constantly

Compensation (Dependent on Experience): $17.50-$21.50 per Hour
