Job Overview
Directly responsible for all kitchen functions including food purchasing, preparation and maintenance of quality standards; sanitation and cleanliness; training of employees in methods of cooking, preparation, plate presentation, portion and cost control and sanitation and cleanliness.
Essential Duties and Responsibilities
Ensure that all food and products are consistently prepared and served according to the restaurant's recipes, portioning, cooking and serving standards.
Make employment and termination decisions including interviewing, hiring, and evaluating kitchen personnel.
Work with front of house manager in maintaining staff compliance with Rogue standards and operation, employment decisions and evaluations.
Provide orientation of company and department rules, policies and procedures and oversee training of new kitchen employees.
Fill in where needed to ensure guest service standards and efficient operations, effectively working on the service line daily.
Work in concert with our management team to ensure the highest level of food quality and guest service is achieved on a consistent basis.
Prepare all required paperwork, including forms, reports and schedules in an organized and timely manner.
Ensure that all equipment is kept clean and in excellent working condition through personal inspection and by following the restaurant's preventative maintenance programs.
Ensure that all products are ordered according to predetermined product specifications and received in the correct unit count and condition and deliveries are performed in accordance with the restaurant's receiving policies and procedures.
Control food cost and usage by following proper requisition of products from storage areas, product storage procedures, standard recipes and waste control procedures.
Oversee and ensure that restaurant policies on employee performance appraisals are followed and completed on a timely basis.
Schedule labor as required by anticipated business activity while ensuring that all positions are staffed when and as needed and labor cost objectives are met.
Be knowledgeable of restaurant policies regarding personnel and administer prompt, fair and consistent corrective action for any and all violations of company policies, rules and procedures.
Oversee the training of kitchen personnel in safe operation of all kitchen equipment and utensils.
Responsible for training kitchen personnel in cleanliness and sanitation practices.
Responsible for maintaining appropriate cleaning schedules for kitchen floors, mats, walls, hoods, other equipment and food storage areas.
Check and maintain proper food holding and refrigeration temperature control points.
Provide safety training in first aid, lifting and carrying objects, and handling hazardous materials.
Minimum Qualifications
Experience:
A minimum of 5 years of experience in varied kitchen positions including food preparation, line cook fry cook and expediter.
At least 12 months' experience in a similar capacity is preferred.
Required Skills:
Customer Service: Kitchen managers might have to interact with customers. Being friendly and courteous will help keep customers coming back.
Attention to Detail: Kitchen managers must keep their eyes on a lot of elements: food standards, costs, safety, etc.
Leadership: Kitchen managers must be leaders in the back of the house, rallying their team during heavy shifts, resolving conflicts and getting the job done.
Management Skills: Kitchen managers not only deal with food, they also must deal with costs, pricing, creating work schedules and more.
Organizational Skills: Keeping work schedules , shipments, cleaning schedules and more organized is crucial to the job.
Problem-Solving Skills: Dealing with employee conflict, irate customers and wrong stock orders is part of the kitchen manager's job. Being able to come up with a solution quickly is a needed skill.
Speaking Skills: Kitchen managers need to accurately and easily communicate standards and cooking methods to staff, give orders and speak with customers clearly.
Stamina: Kitchen managers can expect long days around hot cooking elements, much of it on their feet.
Physical Demands

While performing the duties of this job, the employee is frequently required to sit; stand; walk; reach with hands and arms; climb or balance; stoop, kneel, crouch, or crawl; and talk or hear.
The employee must frequently lift and/or move up to 40 pounds and be able to capably work in a commercial kitchen environment, in which cooler and storage space is shared with the front of the house.

Travel
Kitchen Managers may be required to help at other Rogue pub locations upon request.
