Molino Chido Taqueria, Bebidas y Mas is a new restaurant coming to Stanley Marketplace as a collaboration from two of Colorado's most esteemed chefs. Michael Diaz De Leon (1 Michelin Star, James Beard Finalist) & Tommy Lee (Hop Alley & Uncle Ramen) are opening the Mexico City-inspired eatery in Fall 2025 with a focus on house made tortillas, tacos, communal plates, natural wines, cocktails and Mexican beer.
Ultimately, we're building a fun, exciting experience for a diverse community with the goal of creating simple, delicious food based on the traditional techniques of Mexican food ways!
