Role Overview
The Prep Cook is responsible for preparing, organizing, and stocking all ingredients needed for daily service and production at Sobuneh. This role is essential to keeping the kitchen running smoothly by ensuring accuracy, freshness, and consistency in all prep work.
Prep Cooks work closely with kitchen leads and line cooks to ensure stations are fully stocked and ready for service. This position is ideal for someone who is organized, efficient, detail-oriented, and takes pride in setting the kitchen up for success.
Key Responsibilities
Prep & Production
Prepare ingredients according to Sobuneh recipes, prep lists, and production sheets.
Accurately follow recipes, yields, and portion standards — consistency is critical.
Taste and check prepared items for quality and consistency.
Quickly prepare or restock items that are running low or marked as urgent during service.
Communicate prep progress, shortages, or issues to the kitchen lead promptly.
Stocking, Organization & Receiving
Ensure cook stations are fully stocked with necessary ingredients throughout the shift.
Label, date, and store all prepared items correctly following FIFO standards.
Stock, organize, and rotate deliveries as they arrive, ensuring proper storage and rotation.
Maintain clean, organized prep stations, shelves, and walk-in areas at all times.
Food Safety & Quality Control
Follow all food safety, sanitation, and temperature control guidelines.
Monitor freshness and storage conditions of all products.
Discard items that do not meet Sobuneh’s quality or safety standards and notify a lead.
Dishwashing & Kitchen Flow
Wash dishes continuously throughout prep and service to keep the kitchen flowing smoothly.
Clear and organize the dish pit regularly to prevent backups or delays.
Ensure clean dishes, tools, and containers are returned promptly to their proper locations.
Assist with trash removal and maintaining cleanliness in shared kitchen areas.
Cleanliness & Team Support
Maintain a clean and organized work area — clean as you go.
Participate fully in opening, closing, and end-of-day cleaning duties.
Support line cooks and kitchen leads to keep service running smoothly.
Communicate clearly, respectfully, and proactively with the kitchen team.
REQUIRED QUALIFICATIONS:

Minimum 1 year of prep cook experience in a fast-paced or high-volume kitchen.
Must be legally authorized to work in the United States.
Able to work independently and collaboratively in a team-driven environment.
Willingness to work occasional overtime or schedule adjustments based on business needs.
Preferred Qualifications
Bilingual Spanish/English — highly valued in our kitchen environment.
Experience training, coaching, or supporting kitchen staff development.
General Employment Requirements:
Must be legally authorized to work in the United States and provide any required documentation.
May be scheduled in different stations or areas of the café (within the same role and shift) based on business needs.
Perform additional duties as assigned by your Supervisor or Shift Lead.
Able to work independently and also collaborate effectively within a fast-paced team environment.
Occasional overtime or schedule adjustments may be required to support business needs.
