Cooks are expected to be able to prepare their mise en place. Deal with a rotating seasonal menu. Be comfortable actually cooking and making recipes from scratch.

Expectations:

Set up line according to standards prior to service beginning

Work cleanly, efficiently, quickly

Be willing to take direction positively and adjust habits to conform to required standards.

Autonomy is allowed and encouraged once philosophical understanding is achieved.

Enjoy your work, taste all your mis en place daily before serving, be happy with the quality of the ingredients. All expected regularly. I hold myself to the same standards.
