The Historic Eagle House Cook / Dish supports the daily operations of our restaurant Phatsy Klines, as well as Eagle House Events. This position is a dual role encompassing both Cook and Dishwasher duties, with responsibility for food preparation, cooking, and kitchen cleaning and sanitation.

Duties Include:

Prep and cook menu items according to recipes and standards set by the kitchen manager.

Work with bar staff to ensure that orders are completed accurately and on time.

Maintain a positive and professional approach with coworkers and customers.

Ensure consistency and quality of all prepared dishes.

Utilize and maintain kitchen equipment properly.

Follow industry best practices for food preparation and safety.

Dishwashing Duties:

Wash all silverware, plate ware, pots, pans, and cooking utensils used in the restaurant and during events.

Scrape and sort dishes before loading them into the dishwashing machine.

Monitor dish machine water temperature during sanitary wash cycles.

Unload the dishwashing machine post-cycle, properly storing utensils and dishes.

Sweep and scrub kitchen floors to maintain cleanliness.

Bag kitchen trash and discard it at scheduled intervals.

Maintain adequate levels of detergents and cleaning supplies.

Report any mechanical faults in the dishwashing machine to the supervisor.

Handle glassware and fragile tableware carefully to prevent breakage.

Stock and arrange kitchen utensils and dishes in an orderly manner.

Ensure a clean and organized work environment, adhering to food safety standards and regulations.

Maintain proper and updated records for Food Safety Certification.

Participate in periodic employee meetings and contribute to the growth of the establishment.

Perform any additional duties as requested by management.

Food Preparation Duties:

Set up and stock kitchen stations with necessary supplies.

Prepare food items for service, including chopping vegetables, preparing meat, and preparing sauces.

Assist in cooking menu items in cooperation with the rest of the kitchen staff.

Plate prepared foods based on the kitchen manager’s guidance.

Clean up cooking stations and take care of leftover food.

Stock inventory appropriately and ensure timely food service.

Comply with nutrition and sanitation regulations and safety standards.

Maintain a positive and professional approach with coworkers and customers.

Requirements and Skills:

Proven experience in cooking, including roles such as Line Chef, Restaurant Cook, or Prep Cook.

Excellent understanding of various cooking methods, ingredients, equipment, and procedures.

Accuracy and speed in executing assigned tasks.

Familiarity with industry best practices and food safety standards.

Ability to work well as a team member in an upscale, fast-paced environment.

Flexibility to perform both dishwashing and minor food preparation tasks.

Strong organizational skills and attention to detail.

Positive attitude and strong communication skills.
