Barley & Bine is a restaurant located on the south end of Windsor (near Russian River Brewing). We have a small kitchen operating with convection ovens, induction burners, food warmers and a 3 sink system. We do not have a flat top, fryer, hood fan or commercial dishwasher. We do however crank out tasty food in a fun and efficient work environment. The menu consists of street tacos, soft pretzels, tater tots in multiple forms, flatbread pizzas, salads & wraps. We make as much as we can from scratch and welcome all new ideas and creativity with the menu.

Kitchen Manager Job Description:

The Kitchen Manager is responsible for overseeing all aspects of the successful operation of the kitchen. This includes, but is not limited to, menu and recipe planning and development, coordinating, supervising, and developing kitchen staff, inventory management of all food, BOH paper products, and kitchen equipment, and overall food quality control. The Kitchen Manager hires and ensures all kitchen team members are properly trained in all aspects of their position including opening and closing duties, prep, portion control, and presentation.

Essential Duties:

Hiring, training, and scheduling all kitchen staff.

Ensure staff is properly certified and that all certifications are up to date.

Supervise and provide training and development to kitchen staff in all aspects of the position: opening, closing, prep, storage, portion control, presentation.

Ensure staff follow all health, safety, and sanitation regulations at all times.

Perform quality control on all prep work and food leaving the kitchen.

Effectively communicate upcoming planned specials and changes to menu items.

Rolling specials menu planned at least 3 weeks in advance.

Documentation of all recipes and proper preparation of menu items.

Appropriately order and maintain organized inventory to keep up with demand.

Cost analysis to understand food costs and margin.

Waste analysis to understand areas of waste and propose potential solutions.

Responsible for the upkeep of kitchen equipment and communication when maintenance or replacement is needed.

Follow, communicate, and uphold all company policies and procedures.

Demonstrate professional demeanor with all staff and guests.

Provide regular 30/60/90 and 6 month reviews for kitchen staff.

Take disciplinary action with staff when needed.

Continued proposed improvements of overall operations.

Requirements

At least 2 years experience in a Management or Supervisory role in a restaurant.

Current Safe Managers Food Handler’s Certificate. If not current, must obtain within one month of starting.

Working knowledge of all regulations related to food service in a restaurant environment.

Able to work during peak hours including nights, weekends, and holidays.

Excellent leadership and organizational skills.

Able to effectively delegate responsibilities and maximize resources.

Able to work in a fast paced and sometimes challenging environment.

This is a salaried position that requires a minimum of 40 hours worked per week.

We are offering a competitive salary and a monthly medical stipend.

This position allows 1 week of vacation and 3 days of sick pay per year.
