Job Description:

The Kitchen Manager (KM) is a full time position for Fiorella. This role is responsible for supporting the CDC in leading the day-to-day execution of the culinary operations for Fiorella on the CDC’s regularly scheduled days off. The KM helps to lead the Culinary Team with professionalism, respect, efficiency, knowledge and awareness in the absence of the CDC. This position will manage junior staff members while upholding restaurant standards for execution. This job supports culinary operations in all areas ensuring an aligned, efficient, safe, and high quality food experience.

This role collaborates closely with the Chef de Cuisine and Culinary on all aspects of the culinary operations to help create a unified experience and high-level delivery of food experience for Fiorella. You will be responsible for ordering, BOH execution,and staff management on the days the CDC is off. You are expected to execute the culinary philosophy of the group, display attention to detail and follow through with all restaurant policies.

Fills the operational duties of the CDC in his or her absence.

Checking & Creating prep lists

Ordering produce and dry goods

Preparing and setting up for service

Checking product quality on all stations

Execution of high quality, smooth and efficient dinner service

Supporting end of night check-out and closing duties
