Fort George Brewery is Hiring a Kitchen Manager
The Fort George Brewery operates multiple distinct restaurants and food service operations; the purpose of this position is to oversee all aspects of their operation, cleanliness, and their respective kitchens and staff. The Kitchen Manager works within a leadership team with the Chef de Cuisine and Prep Manager to manage their team. This position, above all, will rely on stellar communication skills, a passionate dedication to leading and inspiring their teams, and experience in hiring, training, supervising, coaching, and managing an effective body of staff. The Kitchen Manager is expected to carry an in-depth knowledge of our restaurants’ kitchens, menus, and methods of preparation, and to be able to convey this knowledge in an accessible way to their supervisors, subordinates, and our purveyors. The Kitchen Manager must be savvy with scheduling and labor budgets, keeping a close line on the prime BOH costs. The Kitchen Manager works a varying schedule to include weekends, evenings, holidays, and extended hours as business dictates.
Essential Functions:
Managerial
Helping to ensure compliance and training for all BOH employees in all company policies and standards, with emphasis on safety, cleanliness, and food safety.
Work with the Kitchen Leadership team to develop any HAACP systems for the kitchens. Ensure all food safety and storage are meeting and/or exceeding regulations.
Lead hiring, training, scheduling, and coaching a staff of safe, efficient, and well-rounded BOH employees. Maintaining labor goals and anticipating hiring and training before the busy season.
Lead in the preparation of and participation in BOH staff performance reviews and training events, with emphasis on employee safety and education.
Demonstrate leadership on all working shifts. Making decisions in the moment, filling in product gaps, and any schedule gaps that arise.
Working with the Kitchen Leadership team to train and develop all BOH staff.
Overseeing with HR in handling grievances and mediating issues.
General
Possessing an in-depth understanding of our brands’ restaurants and their menus, and being able to communicate that information to coworkers, subordinates, and purveyors.
Follow and understand food trends, guest feedback and work with the Chef de Cuisine to pitch changes and drive special offerings for sale in the pubs.
Assisting the Chef de Cuisine and Prep Manager with production of any special event menus or dishes.
Assisting in kitchen operations and food-related aspects of the annual Fort George Festival of Dark Arts and other festivals.
Lead in the purchasing/replacement/cleaning/maintenance of all BOH equipment including but not limited to all ovens, grills, fryers, slicers, kitchen areas, BOH coolers, etc. Oversee maintenance schedule with maintenance personnel.
Monitor and document BOH sales for use in inventory, future scheduling, hiring, and projections.
Helping to monitor food waste, working with the Prep Manager and BOH staff to minimize food waste.
Monitor BOH labor costs working with the Kitchen Management team and BOH staff to maximize efficiency of labor costs.
Helping to monitor Costs of Goods Sold (COGS) working with the Chef de Cuisine and BOH staff to maximize efficiency COGS.
Assisting Prep Manager with BOH inventory tasks.
Regularly working BOH shifts, including but not limited to opening, shift change, breaks, and closing duties as business needs dictate.
Verifying security and safety of the building and its occupants while on shift, including verifying all doors, windows, and entrances are locked at the end of closing shifts.
Filling in for absent staff as needed.
Responding to digital messages in a timely manner and keeping tabs on company channels for appropriate response.
Continuing food education for self and team.
Maintain strong relationships with all company departments.
Other duties assigned by Pubs General Manager or Senior Leadership.
Communication & Participation
Attending all scheduled meetings and mandatory events.
Lead meetings when assigned.
Communicating with managers and team members on our communication apps.
Keeping informed about company news via weekly newsletters and our communication app.
Ability to successfully communicate and exchange information with coworkers.
Knowledge, Skills, Abilities, & Ideal Qualifications
Must be 21 years of age or older
Experience leading complex people teams in a full-service, high-volume restaurant setting required
Valid Food Handlers card required (must be obtained within 30 days from first date of employment)
Ability to read labels on chemicals
Knowledge of workplace and safety procedures (may be obtained during training)
Ability to communicate with patrons, purveyors, and coworkers
Basic computer skills, knowledge of Google suite products and online systems
Basic math competency including but not limited to addition, subtraction, multiplication, division, and computation of rates, ratios, and percentages
Being able to adapt to frequent changes in workload and adjust priorities quickly as circumstances dictate
Compensation and Benefits We Offer (varying eligibility criteria):
$62,000 to $64,000 per year DOE
