With specialty cocktails, unique rolls, and spectacular sushi and sashimi platters, Chef Uechi skillfully translates Japanese flavors for the American palate. The superb talent and exacting precision of Katsuya has changed the face of Japanese cuisine.

Katsuya analyzed the eating habits of the American public and stepped outside of what is considered to be traditional Japanese cuisine, mixing the former with California style cuisine. This innovation ignited the new sushi trend that spread like wildfire throughout the industry.

Under the general guidance of the Executive Chef, perform the daily execution of all assigned Pastry Cook production. This position is responsible for ensuring the highest quality food is served at all times. The Pastry Cooks handles all aspects of their assigned station – sets up, stock product, cook, and presents dishes according to recipes, cleans, sanitizes and maintains equipment, utensils and tools.

Job Responsibilities:

· Respects all food products and ensure proper storage and rotation are practiced daily in accordance with SOP’s, local Health Department and HACCP regulations

· Follows specifications, recipes and execution of all SOPs & recipe guides to ensure flavor, quality, size and presentation of products meet the venue’s standards

· Maintains a clean and organized work area at all times and is in compliance with the established sanitation standards of superior personal hygiene

· Maintains clear and effective communication between employees and promotes a positive atmosphere in the kitchen

· Understands and takes part in the venue’s sanitation standards and encourages in the savings of the company’s assets by preventing unnecessary waste

· Follows all company policies and procedures including food safety program and safety and security

· Finds methods to improve the efficiency of the department and increase productivity

· Communicate effectively, both verbally and in writing, to provide clear direction to the venue teams.

· Communicate with employees using a positive and clear speaking voice, listen to and understand requests, respond with appropriate actions and provide accurate information.

· Remain calm and alert, especially during emergency situations and/or heavy restaurant activity, serving as a role model for team and other employees. Interact with other department personnel and venue staff as needed.

· Make decisions and take actions based on previous experience and good judgment, sometimes revising procedures to accommodate unusual situations.

· Understands safe usage and cleanliness of tools and smallwares – ie: blender, mandoline, knives, etc.

Requirements

· High School Diploma or equivalent.

· Current Food Handlers card.

· Ability to read and follow cooking specifications and directions.

· Ability to perform tasks with accuracy, speed, and attention to detail.

· Ability to thrive in a fast paced environment.

· Ability to work on feet for the duration of shift.

· Must be able to work a flexible schedule to include days, nights, weekends and holidays.

Work Authorization:

Must be able to provide documentation that shows you are authorized to work in the United States. Must be at least eighteen (18) years of age.

Education / Experience / Credentials:

Minimum of one (1) year relevant experience in kitchen or service focused environment. It is the employee's responsibility to secure and maintain status of all required certificates, licenses, or registrations when required by local, state, or federal government agencies. ANSI approved Food Handler Card and Responsible Beverage Service certificate recognized by the ABC (if applicable).

Language:

Must have the ability to speak, read, write, and interpret business documents in the English language. Multi-lingual skills are a plus.

Travel:

Must have access to reliable transportation locally, as this position requires presence at the venue and is not a remote position.

COVID-19 Precautions:

This position will be based at the venue and not remote. Personal protective equipment is always required, as well as following social distancing guidelines, and health and safety measures of hand sanitizing and cleaning procedures. All CDC and LA Department of Public Health mandates are followed.

Must be able to stand or walk a minimum of eight (8) hours.

Must be able to twist, tow (push or pull), reach, bend climb and carry objects as necessary.

Ability to kneel, reach, bend, stoop, push and/or pull, and lift at least 35lbs.

Must be able to work in a fast pace and high-volume environment in the presence of areas containing secondhand smoke, high noise levels, dancing, bright lights, and dust and communicate during this time – sometimes within a small area.

Must be able to work inside and outside at all times of the year as needed, based upon business volumes.

Job Type: Part-time

Pay: $19.00 - $21.00 per hour
