chef and manager for new steakhouse
Chef/ GM Manager
New Steakhouse to open in Downtown Albany, needs an experienced kitchen manager to lead current production kitchen.
Main responsibilities include:
-Get kitchen ready for City inspection, must know appliances, stoves, grill freezers etc
- Executing prep and cooking of daily menus in a timely manner
- Supervising line/prep/dish while maintaining the company’s high standards
- Assisting chef with inventory, food procurement, supply ordering, storage
and rotation, plate presentation, and seasonal menus
- Assisting chef with staff hiring, training, evaluation and discipline
- Ensuring consistency, portioning and freshness of all food
- Contributing to company’s standards through daily line checks and food
reviews, responding to guests’ feedback/scores, ongoing maintenance and
housekeeping
- Maintaining a positive, safe and clean kitchen
Ideal candidate must have:
- Minimum of 2 years experience in a resturant and in a similar
position
- Ordering of product and extensive product knowledge, and maintaining
inventory and food cost experience
- Recording changes in recipes and new menu items for consistency
- Strong leadership, ability to motivate a team, communication skills and be
able to multitask and delegate with efficient use of time
- Ability to work early mornings and weekends
- Physical dexterity to operate kitchen equipment, machinery, knives, etc., and
grasp/lift/carry up to 50lbs as needed
- Experience with last-minute changes, additions, and thinking on their feet
- Problem solving skills as well as basic computer skills and ability to
send/receive emails/text messages, etc.
- Passion for food, desire to grow, learn, and excel in a company with many
opportunities
- Ability to hear, detect, and sense emergency situations and react
appropriately
- Culinary education background a plus
