Hiring Head Chef / (with bonus)
Job Title: Head Chef
Location: Chubby Tan
Reports To: General Manager / Ownership
Position Summary:
The Head Chef at Chubby Tan is responsible for leading all kitchen operations, ensuring food quality, consistency, cost control, and team development. This role is hands-on, leadership-driven, and execution-focused. You set the tone of the kitchen — discipline, speed, and standards — every single service.
Key Responsibilities & Kitchen Operations:
1. Oversee daily BOH operations, including prep, service, and closing procedures
2. Ensure all dishes meet Chubby Tan’s standards for taste, presentation, and consistency
3. Maintain smooth service flow during peak hours
4. Develop and update prep lists, pars, and station setups
Menu Execution & Development:
1. Execute the existing menu with precision and consistency
2. Collaborate with management on menu updates, seasonal items, and specials
3. Standardize recipes, portion sizes, and plating guides
4. Ensure new menu items are costed, tested, and trainable
Team Leadership & Training:
1. Lead, train, and mentor BOH staff (line cooks, prep cooks, dish team)
2. Enforce kitchen discipline, cleanliness, and professionalism
3 .Conduct onboarding and ongoing skills training
4. Build a culture of accountability, teamwork, and pride in the craft
Inventory & Cost Control
1. Manage food inventory, ordering, receiving, and storage
2. Monitor food costs, waste, and spoilage
3. Work with management to meet food cost targets
4. Conduct regular inventory counts and audits
Food Safety & Compliance
1. Ensure full compliance with health department regulations
2. Maintain high standards of sanitation and food safety
3. Train staff on proper handling, storage, and cleaning procedures
4. Be inspection-ready at all times
Qualifications
1. Proven experience as a Head Chef or Sous Chef in Japanese Cuisine at least 3 years
2. Strong understanding of BOH operations and high-volume service
3. Leadership mindset with hands-on execution skills
4. Ability to train, motivate, and manage a diverse kitchen team
5. Knowledge of food costing, inventory systems, and prep planning
6. Ability to stay calm and decisive under pressure
