Head Sushi Chef
Maintain hygiene standards and follow DOH guidelines.
Manage food stock, working with an attention to detail to fulfill all orders while maintaining quality standards.
Coordinate with our front of the house staff to ensure proper preparation, considering special requests and food allergies.
Must be able to communicate clearly with manager, kitchen and dining room personnel and guests.
Responsible for preparing various types of Japanese dishes according to established guidelines on quality, portion size, presentation, and food safety.
Sterilize all utensils, instruments, and equipment used in sushi preparation before every use.
Responsible for expertly cutting, slicing, and filleting different types of fish.
Inspects the quality of fruits, vegetables, and fish used to prepare sushi dishes.
Produce rolls in a high-volume environment while maintaining quality
Prepare all types of sushi, including nigiri and sashimi.
Replenish service lines as needed and restocks and prepares the workstation for the next shift.
Prepare and serve menu according to the restaurant’s recipes, portioning, cooking, plating, and serving standards.
When applicable, ensure that all products are ordered according to predetermined product specifications, received in correct unit count and condition, and deliveries are performed in accordance with the restaurant’s receiving policies and procedures.
Help control food cost and usage by following proper requisition of products from storage areas, product storage procedures, standard recipes and waste control procedures.
Assist with department inventory when asked.
