Executive Chef: Poissonier
Azzaro Yarmouth LLC dba Lobster Boat restaurant located at 681 Route 28 in West Yarmouth, Ma Barnstable County and telephone number 508-775-0486 is seeking to fill a full time poissonier chef position to create recipes from scratch and production methods; maintain a clean and safe working environment, including but not limited to food, use of kitchen equipment, utensils and sanitation; train and instruct staff in proper food handling preparation and procedures: oversee food preparations and develop new and innovative food products and excellent quality food to meet market and consumer expectations; ensure that their management is in line with with the company's HR policy, fine tuning if necessary; prepare work schedules for the team and organize staff meetings, help prepare and implement a training plan for the team and remain current in food concepts.
Must have a Bachelor's Degree and employment of 32 months experience, alternate sets of education: none, other majors and/or fields of study required: Culinary Chef Management or Training and Hospitality.
Poissonier (aka Fish Chef) must know how to cook all kinds of fish and crustacean seafood dishes and have knowledge in the butchery of raw materials and how to utilize all parts and create dishes.
Special skills required but not limited to : supervisory skills, coaching staff, and developmental skills: guest focused, professional team leader, detail oriented and positive attitude working with people. Multi- cuisine exposure is a must.
Employer will compensate annual salary of 84,261.00.
